Very hard to believe that a year ago we stepped off that plane with no idea of what we had signed ourselves up for, what Guatemala would have in store for us, and if we would even be able to hack it. We arrived very excited, very nervous, and totally clue-less.
12 months later I cannot help but feel really proud of the life we created for ourselves here. We have incredible friends, more than a few memorable adventures under our belt, we have seen and done things we never imagined we would, and I think we are starting to figure out this FS thing. We have hard days, frustrating days, we miss our old life and friends at home days, what did we get ourselves into days....but mostly we have incredibly interesting, we cannot believe we are lucky to be here doing this, very grateful days.
Happy anniversary Guatemala. You will always hold a special place in our hearts!

And what better way to celebrate our Guate-versary than with a total blowout Thanksgiving feast with all of our most favorite people in the Guate?!?!?

We cooked up a storm, a huge turkey, salads, cranberry sauce, pies...so much food and then joined 30 other people who did the same. We have some pretty talented chefs in the group, my husband of course included, and we feasted like you should on such a wonderful holiday. Good cheer was in the air, all thankful for our families, great friends, health, amazing opportunities, and all the adventures that lie ahead.
Of course the whole time wishing that we could be with our families to tell them in person how much we love them and how grateful we are for them....we miss you, but thankfully we will have the chance to do so soon!
Hope you had a wonderful Thanksgiving as well!
P.S. Remember that expensive pumpkin that I was so obsessed with?!?!? Well let me tell you, I have whipped that thing into pumpkin cardamon bread, pumpkin rum spice cookies, pumpkin pancakes, pumpkin bittersweet chocolate caramel pie, pumpkin lentil stew...and we still have pumpkin leftover! Can you turn orange from eating too much of this stuff?

P.P.S. How did we get so lucky to have so many wonderful people in our lives? We have recently received the most thoughtful, incredible care packages filling all the voids in our life and making us feel so loved! I of course cry over every single one and now still just writing this I tear up. Words will never express how much we adore you and appreciate you. Thank you, thank you, thank you!!!
Awesome turkey!!!
